Method
1. Combine all the ingredients into a dough, and knead. Allow to rest for half an hour, then knock back and leave to rest again. When the dough has doubled in size, proceed to step 2.

Alternatively you can throw everything into your bread machine on the dough cycle.

2. Divide the dough into six equal parts. Form each part into a long suasage. Take three parts and push the ends together. Form a plait as in the picture.

3. Allow the zopf to rise to about double its size.
Preheat the oven to 190°C (gas mk 5, 375°F). Place the zopf on a baking sheet and bake for 25 - 30 minutes.


Optional: mix together the juice of one lemon and about 12 tablespoons of icing sugar, and brush this over the breads while they are still warm.

750g Flour (plain)
1 Eggs
80g Sugar
500ml Milk
50g Butter
(at room temperature)
