1. Preheat the oven to 180°C (gas mk 4, 350°F). Peel, core and slice the apples. 2. Place half the apples in a baking dish, and sprinkle with one tablespoon of granulated sugar and half the cinnamon. Add the rest of the apple. Pour two tablespoons of water over the apples and then sprinkle them with a further half tablespoon of granulated sugar and the rest of the cinnamon. 3. In a bowl place the flour, ground almond, caster sugar and butter. Rub together using your fingertips until the mixture resembles breadcrumbs. Mix in the walnut pieces. 4. Cover the fruit with the crumble mixture - don't smooth it down. 5. Bake for about 45 minutes, until the crumble is browned and the apple is tender. Serve hot or cold. If you don't like cinnamon then reduce or omit it. The nuts can be left out, or others added to your own taste. Use other cooking apples if you cannot get hold of Bramleys.
